January Menu

Don't you just love January? I do. It offers a clean start, a fresh look at my life. I love the holidays, but I really love clearing away all the decorations, which by January 1st just look like clutter, and brushing away the cobwebs of neglected habits and duties in my life. I love the feeling that this can be the year that I accomplish something I have always wanted to do.

My goals each new year generally include weight loss. As someone who loves making and eating good food, I also struggle to maintain a healthy weight. This year, my outlook is a little different. Although I hope to lose weight, my goal this year is to focus more on being healthy and to develop a healthier relationship with food, especially sweets. I want to help my family eat more vegetables and whole grains and less sugar and meat. I want us all to move our bodies more, to make them stronger, leaner, and more powerful. I want to take better care of this gift that God has given me, rather than resent my imperfect body.

With that in mind, I planned a menu yesterday for the first week or two of the year. Creating menus before I do my grocery shopping is one of those habits that I used to have before the holidays--one that needed to be dusted off before it was completely shelved.:) When I mentioned on facebook that I was headed out for the ingredients for my new, healthy menu, I had several requests that I share.

So, in planning my family's meals, I tried to keep in mind our family's goals of increasing whole grain and vegetables while reducing sugar and meat. I'll also count my cal0ries and avoid overeating (most days) on thedailyplate.com. Your family's goals for eating may be different; if your goal is high protein or gluten-free or as low fat as possible, this may not be the menu for you. But if you just need a menu to help you kick start cooking meals for your family again, check out mine.

Instead of assigning these meals to a specific day, I planned seven complete meals, which I plan to serve over the next 10 days before we head out of town for my brother's wedding. Some days we'll just eat leftovers or throw together a salad. Each morning, I'll choose the meal that meets my needs in terms of time commitment for that day.

  • Meal #1: Potato Leek Soup with grilled cheese sandwiches and fresh fruit (Recipe comes from one of my Weight Watcher's cookbooks, but I found a blogger who had posted it here.)
  • Meal #2: Southwest Brown Rice & Black Bean Burgers (from Prudence Pennywise), served with fresh pineapple, guacamole, sweet potato baked fries, and cibatta rolls
  • Meal #3: Garlic Chive Fettucine w/ Sauteed Chickpeas & Parmesan (also Prudence Pennywise). I'll use whole wheat pasta and serve this with crusty, whole grain bread and a small salad. I've made this recipe before and it is DIVINE.
  • Meal #4: Bean & Barley Soup (Cooking Light) with crusty, whole grain bread.
  • Meal #5: Citrus Glazed Chicken Thighs (Cooking Light), served with brown rice, mandarin oranges, and roasted green beans.
  • Meal #6: Butternut Squash Lasagne (Prudence Pennywise, what would I do without you?), green salad, sauteed zucchini, and crusty bread. (Do you see how much we love crusty bread? I will either make my own or pick up a whole grain loaf at Costco or Trader Joe's that day.)
  • Meal #7: Midwestern Corn Chowder (see my recipe below) with fresh whole wheat bread.

Midwestern Corn Chowder
  • 3 cups diced potatoes
  • 1 cup carrots, peeled and diced
  • 1/2 cup celery, diced
  • 1 cup onion, diced
  • 6 cups chicken broth
  • 2 T. to 4 T. butter
  • 1/4 c. flour
  • 2 cups whole milk, fat free half-and-half, or half and half
  • 2-3 pieces of cooked bacon, crumbled
  • 2 cups shredded cheddar cheese (the sharper the better)
  • 1 can creamed corn
  • salt and fresh ground pepper
  • fresh cilantro for serving
Place the broth in a large saucepan or stock pot. Simmer the vegetables in the chicken broth, with the pan covered, until tender, about 30 minutes. Mix the roux over medium heat in separate medium saucepan, combining butter and flour, then whisking in milk until smooth. Cook, whisking constantly, until bubbly and thickening, then add to the broth and vegetables. Add the creamed corn, then salt and pepper to taste.

Garnish each bowl with 1/4 cup shredded cheese, 1 T bacon, and 1-2 T fresh cilantro.

What are your favorite meals in January? Share!!!

Jermaine Beckford, goal-scoring hero

Leeds United sensationally knocked Manchester United out of the FA Cup this afternoon at Old Trafford, winning 1-0.

Jermaine Beckford, Leeds' ace striker, scored in the 19th minute to send the English Premier League champions crashing out in the third round.

Leeds rekindled the glory, glory days of when they topped the Premiership at the beginning of the decade. They now languish in League One, the third division, but hopes are high as they lead the table by eight points.

Don Revie would have been right proud of you lads!

Smile

I guess you can't keep a gummy smile forever (even if it is stinkin' cute). Asher's bottom tooth finally broke through. He's getting closer to crawling all the time, too. He needs a little more strength in that right arm. I think he'll get it.

The new year has just begun & I've already discovered a few NEW favorite things that I MUST share with you!

NUMBER 1 is LUSH's Cosmetic Warrior Mask. No, it's not vegan (there are eggs in it), but YES it is amazing. I don't mean amazing like that movie you saw 5 times in the theater or that new pair of boots you bought yourself for your birthday. No no, this stuff is a bona fide miracle that you rub all over your face. I've had acne for as long as I can remember & after using this lovely mask once a day for a week, my face has NEVER been clearer. My pores have NEVER been smaller. I know what you are thinking - If I love it so much why don't I marry it? Well I would! But the courts would not recognize our union and anyway we really need to focus on getting gay marriage legalized first don't ya think?
**Unfortunately you can not order it on their website. You have to pick it up at a LUSH storefront. So find a LUSH near you & run don't walk.

NUMBER 2 Speaking of gay marriage... Nicole J. Georges' 2010 Queer Animal Odyssey Calendar puts the biggest smile on my face & helps me keep track of all my goings on. It's filled with illustrations of animals who appear on the list of 1500 species that display homosexual behavior (i.e. sea lions, koalas, elephants, cows & more). I suggest you get yours today before the year starts to slip away from you.. and don't feel weird about loving this calendar, it's totally natural.

3. Nut Cheese!
Yeah, I know it sounds silly and disgusting, but trust me - it's something you want to put in your mouth. I've been a fan of "sun cheese" (yummy-ness made from sunflower seeds) but I recently made a batch of cashew cheese and it's vegan and effing tasty!
Want to try the nut cheese? I know you do!

Here's the recipe (pulled off the whole foods website)
Ingredients:

1 cup cashew butter
1/4 cup almond milk
2 tablespoons tahini
2 tablespoons nutritional yeast flakes
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon white pepper

And - here's what ya do:
Place all ingredients in a food processor and blend until smooth and combined. Alternately, mix them in a large bowl using the back of a wooden spoon to mash them together. Store in an airtight container in the refrigerator for up to 1 week.

good for sandwiches, just dip veggies in it or add a little more almond milk and use it as a sauce for pasta. It's total yum!
Happy New Year Everyone! I hope you were all dancing around with sparklers & making out with a hottie when the ball dropped. 2009 was a real flaming bag of crap of a year. No, it wasn't all bad, but the boat was rocked, no doubt about it. I'm feeling pretty optimistic about 2010 though. How about you? Do you feel like a page has been turned & the bulk of the unpleasantness is over? Here's to hoping!

After my last post I ditched town for a while & went to hunker down with family in an attempt to get out of my funk. It worked! I feel Rah-Rah-Ready to take on the new year!

Resolutions? You bet!

1. Cut the crap. Sure, this sounds vague and a touch overwhelming because there is so much crap in life, but I've got a plan. I've set up a daily schedule so that I will have time for all the things I give a shit about rather than trying to fit them in around all the bs that I have to do. This schedule is my ticket getting what I want out of this life. So for 2010 the mantra playing non stop in my head is Hagrid giving Harry instructions for getting on the train for Hogwarts his first year "stick to your ticket". More time for creativity - less time running around with my head up my butt trying to make it all work.

2. In the spirit of cutting the crap, I'll be spending less time with the people who turn out to be the devil on my shoulder & much much more time with people who want to make & do things. Yay Things!

3. Less TV & more music! Hulu (like so many other things that are bad for you) is awesome. But I'm breaking up with it. Our relationship has become unmanageable & at times codependent. I've decided that I will pop into my local record store every tuesday so I can check out what has just been released and pick up some more ear candy for my collection. This is an excellent plan because every Tuesday at Waterloo Records they have a Vinyl Happy Hour - all records 10% off. Hell Yes!
* Psst! There is a vinyl revival going on! With indie labels selling records that come with a free mp3 download of the album & turntables that will digitize your record collections becoming widely available it looks like records won't just be for hipsters, geeks & dj's anymore <3

4. Juice! Yep, I got a juicer for xmas & I'm more excited than a virgin on prom night! A magical world of sweet & sour & salubrious concoctions await! Don't worry, I'll share some of my recipes with you, because sharing is caring & that's what we're all about here at Good Girls & Geeks ;)... now if only I could juice a cupcake.. nah, they're perfect the way they are.

5. TRAVEL MORE! I do not get out of Austin, TX as much as I should!

Five is more than enough - right? What are your new years resolutions? Going to lay off the sauce? Read more? Learn a new language? Do tell!

xo!

New Year's Day 2010

We woke on New Years morning to Anna padding in to our room at 7:15am.

"When I woke up this morning there was a man in my bedroom"
"But then I saw it was just a t-shirt and a pair of pants"

You can bet we were wide awake after that one.

Then Lucy woke up. I love this stage of babyhood, soon to be over, where the giant bowling ball head is the hardest thing to balance and maneuver. When she wakes up, still floppy with sleep, she has the hardest time lifting her head. It's as much as she can do to push her bottom high in to the air while she circles and tries to gain the momentum to raise her head. Eventually she'll greet us with a toothy grin and a puff of white candy-floss hair and then she'll crash back in to the pillows with the effort.

A warm baby with a giant overnight nappy and an overly imaginative 4 year old. 2010 started well.

And to end: a sunset walk on the beach. Red sky at night, shepherd's delight. Hopefully auguring in a good year for all.
